Ingredients

For 2 medium-sized cauliflowers

Method

  1. Cut the cauliflower into medium-sized florets. Heat water until it boils, switch off the heat, and soak the florets in the hot water for 4–5 minutes. Drain well.

  2. Heat oil in a kadai and lightly fry the drained florets until a few surfaces turn pale golden. Do not fry them dark brown. Remove and keep aside.

  3. Fry the sliced onions until golden-brown. Add the cashews and fry lightly. Drain the excess oil and transfer them to a mixer jar. Add the soaked poppy seeds, green chillies and beaten yogurt. Blend into a smooth paste.

  4. Heat the remaining oil in the kadai. Add the bay leaf, cardamom, cloves and cinnamon. Add the ginger-garlic paste and tomato paste together. Cook while stirring.

Add turmeric, Kashmiri chilli powder, coriander powder and cumin powder. Continue cooking until the masala thickens and begins to release oil at the edges.

  5. Add the prepared onion-cashew-poppy-seed-yogurt paste to the cooked masala. Mix well and cook over low heat, stirring regularly. Gradually add hot water and stir until the gravy becomes smooth, rich and thick.

  6. Add the lightly fried cauliflower to the gravy and gently turn the florets so they are evenly coated. Cover and cook on low heat until the cauliflower is tender and absorbs the flavours.

  7. Add the soaked raisins and sugar near the end. Mix gently until the sugar dissolves. Finish with garam masala powder and slit green chillies. Cover briefly and let the flavours combine.

Keep the cauliflower florets intact; do not over-fry them.

Cook the masala thoroughly to remove the raw smell.

Add hot water gradually to control the gravy consistency.

The roast should have a rich, thick gravy with a mild sweetness.

Adjust salt, sugar and water according to taste and the size of the cauliflower.
